Sold year-round; the Dutch and Spanish glasshouse crop is reliable. Buy red or yellow for sweetness, green only when you want the grassy bitterness.

Glossy, taut and heavy for their size, with a firm green stem. Wrinkling at the shoulders is the first sign of age.
