Ingredient
Blueberry
The pale bloom on the skin is a natural wax the fruit produces, not a residue — rubbing it off shortens the berry's life, so wash them only at the last moment.
- Sourcing
- Wild or lowbush berries are much smaller and far more intensely flavoured than the cultivated highbush kind; frozen wild blueberries are a genuinely good buy.
- Varieties
- Highbush, Wild (lowbush), Rabbiteye
- Quality cues
- Firm, deep blue with an intact silvery bloom. Red tinges mean underripe; softness or juice staining the punnet means the opposite.
- Substitutions
- Blackcurrant, Blackberry, Raspberry
- Storage
- Refrigerate dry and unwashed in a vented punnet. Freeze in a single layer on a tray before bagging so they stay loose.
- Shelf life
- 1-2 weeks refrigerated; 12 months frozen
