Borlotti bean

Cooked borlotti, as they come from a tin. The cranberry speckling that makes them beautiful raw cooks out to plain brown, so recipes that care about the look call for them fresh in the pod.

Italian delis sell them tinned and in jars; jarred beans are firmer and better but cost more. Fresh in the pod appear briefly in late summer.
