Bourbon
American corn whiskey aged in charred new oak, which is where the vanilla and caramel come from. In cooking the alcohol goes and those barrel notes stay, so it reads as sweetness and wood rather than as spirit.

- Any off-licence. A mid-range bottle is right for cooking; the subtleties of an expensive one do not survive a pan.

- Quality cues
- Amber to deep copper. Colour comes from the barrel and tracks age loosely.

- Rye whiskey, drier, Dark rum, sweeter, Brandy
- Storage
- Upright in a cupboard so the spirit does not sit against the cork. It does not improve in the bottle but barely declines either.

- Indefinite sealed, years opened
