Ingredient
Brussels sprout
Miniature cabbages on a stalk. Their reputation comes from being boiled, which drives off sulphur compounds into the room; roasted or shredded raw they are sweet and nutty and a different vegetable entirely.
- Sourcing
- Autumn and winter, best on the stalk. Smaller sprouts are sweeter; large ones turn cabbage-y and loose.
- Varieties
- Green, Red, Baby, On the stalk
- Quality cues
- Tight, squeaky and bright green with an unblemished base. Yellow outer leaves and a loose head mean age.
- Substitutions
- Cabbage, shredded, Cavolo nero, Broccoli, for roasting
- Storage
- Refrigerate unwashed and untrimmed; they keep far better on the stalk.
- Shelf life
- 1 week refrigerated, 3 weeks on the stalk
